"Crossing out" an item in plaintext is kind of fiddly and abstract. Like, how do you even do that? Put an "x" in front of the line? Turn the - bullet into a +? Guh.

Basically. Use a monospaced font. Two spaces in front of a task [space, space]. When you cross something off, replace its first space with an 'x' [x, space]. Crossed-off entries stand out more than they would if you'd had a dash or bullet to (instead of a space) to signify an unfinished task. My method for years.
