Baba is Ganoush
Oct. 13th, 2021 11:22 pmAt some point in the last couple years we learned the secrets of baba ganoush, which I will now share with you.
- You must follow Yotam Ottolenghi’s instructions for how to set a whole eggplant on fire. It’s somewhere in “Jerusalem” I think, but the point is you’ve GOT to get the outer layer honest to god carbonized, and then you can scoop out the newly flavorful innards. Broiler works, so does grill or directly on a gas burner (tho cleanup is a fucker there).
- Once you do that, probably any recipe will do, we use the one in the original Moosewood cookbook and it comes out brilliantly.
- Fresh squeezed lemon juice is better than bottled for this. Well, for most things, but it’s enough of the flavor here that it’s very worth it.
- If it doesn’t taste enough like itself, it needs more lemon or more salt.
- Fresh crusty bread. :]
